Berry-Stuffed Waffles

… with Exquisite Vanilla Signature Ice Cream

You’ve heard of breakfast for dinner – now try breakfast for dessert!

Ingredients:

  • 1 pintpierres-exquisite-vanilla-signature-products Exquisite Vanilla Signature Ice Cream
  • 8 frozen waffles, thawed, prepared and cooled
  • 1 21-oz. can of strawberry, blueberry or mixed berry pie filling, divided
  • 1 tub whipped topping

Prepare the waffles per package directions. Let cool completely. Remove the ice cream from the freezer; let soften for about 15 minutes.

In a medium mixing bowl, combine the ice cream and one cup of the pie filling until the ice cream is “marbled” by the berries. Cover and place mixing bowl in freezer for at least 15 minutes.

Lay out a row of four waffles. Place one scoop of the ice cream mixture on each waffle; press with a spatula to flatten the scoop so the ice cream reaches the edges of the waffle. Place another waffle on top of each, and press again to form the sandwich.

When it’s time to enjoy this fruity treat, place a dollop of whipped topping on each plate and drizzle with some of the reserved pie filling.

For a restaurant-style presentation, cut each sandwich in half. Plate 2 sandwich halves on each serving dish backward so they form an “X” shape, and then top with whipped topping and pie filling.

Serves 4.
