Make your own homemade ice cream sandwich creations using your favorite cookie recipes and ice cream flavors.
Here’s a simple recipe we put together for you featuring fresh-baked cookies. You can watch us make it on Pierre’s YouTube channel.
First, open a package of refrigerated chocolate chip cookie dough. Set aside a half a cup of miniature semisweet chocolate chips or candy sprinkles and a container of your favorite Pierre’s Ice Cream flavor, slightly softened.
We’re using Pierre’s Chocolate Chip Cookie Dough Ice Cream for this recipe.
Bake the cookie dough according to instructions on the package … typically 10 to 15 minutes or until light golden brown. Cool for one minute; remove from cookie sheet to cooling rack. Cool completely and pop into the refrigerator to chill.
Cut nine, 12”x9” sheets of plastic wrap or waxed paper. Place chocolate chips in a small, shallow bowl and set aside.
For each sandwich, spoon about 1/4 cup ice cream onto bottom of one cookie. Top with the second cookie, bottom side down; press together gently. Roll outer edge of ice cream in chocolate chips or candy sprinkles. Quickly wrap each sandwich in plastic wrap.
Freeze for three hours or until firm. For longer storage, place wrapped sandwiches in a re-sealable freezer plastic bag. Let them stand 10 minutes before serving.
If baking isn’t your thing, store or bakery-bought cookies are just as delicious. Experiment with different flavors, like Coffee Ice Cream and oatmeal cookies, lemon cookies with Strawberry Ice Cream or combining Pierre’s Strawberry Cheesecake Ice Cream and sugar cookies!
Graham crackers and ice cream are a yummy combination. Break them along the perforations into smaller rectangles and spread a small spoonful across the top for an open-faced ice cream sandwich. Enjoy regular graham crackers with Campfire Toasted S’mores. Combine cinnamon graham crackers and Pierre’s French Vanilla Ice Cream, or Mint Chocolate Chip Ice Cream with chocolate graham crackers.
